Uh oh! Looks like Sacramento County government doesn't like good street food. The county govt. passed a law that makes it so difficult to operate that many of these trucks have gone the way of the Do Do Bird.
So although 'The Machine' is gone, I'm still cookin' up tasty grub...call for catering info!
I'm Tracy and I came up with the idea for the place. I'm originally from Florida and moved out to California back in 1995. Back home, I worked in the circus & I was an alligator handler so needless to say, I was out of a job when I got here. Long story short, I found myself in culinary school.
I really dig the fresh Cali produce & the wealth of available food products, but I really miss my 'home food'...the mix of 'Amer-Ital' dishes from the local pizza joints, sauced-up wings, the homestyle Cuban, Latin American & Caribbean flavors from the Cafeterias on Calle Ocho & the jerk shacks in our neighborhood. I especially miss my Mom & Gramma's hearty German and Jewish suppers.
What you'll find on the menu is what I grew up eating mixed with things I've grown to love with a touch of what I've savored on my travels. I've 'Cali-fied' it a bit, using organic produce when I can, buying from family butchers and just freshening it all up and my hope is that even if you didn't grow up eating these dishes, you'll want to make up for it.
The first thing you'll notice about us is that we're not a typical restaurant...we're The Cuisine Machine! I decided to use a mobile kitchen because #1. I like to do things a little differently and #2. I want to be where the action is! If I can't get my food to enough of you, I'll find a place where I can. You may be tempted to call us a 'Roach Coach' but we have a good sense of humor...this is some mighty fine street food! We have a menu of favorites and we also make daily specials. If there's anything you'd like to see on the daily board, please ask. I promise we'll do our best to prepare it 'cause everyone needs a little bit of home cookin' in their belly once-in-a-while.
